About Farrow & Jackson

The Southern Highlands of New South Wales, 150 km south west of Sydney, is increasingly recognised as one of Australia’s emerging wine growing regions. Located at 700m in the high altitude sub-region of Fitzroy Falls, the Farrow & Jackson vineyard was first planted in 1998, and our most recent harvest was in 2007.

With its warm days and cold nights, the prolonged ripening season provides perfect conditions for growing the premium quality cool climate chardonnay grapes we concentrate exclusively on to produce Farrow & Jackson chardonnay.

The growing season begins with budburst in late September and harvest is typically the first week in April. After picking, the grapes are transferred immediately for crushing to the Southern Highlands Wines winery in Moss Vale under the guidance of winemaker Eddy Rossi. After crushing, Eddy allows the juice to ferment slowly at low temperature before aging a proportion of the wine in new French oak barrels for 7 months. The wooded wine is then carefully blended back in exacting proportions to produce the lightly wooded chablis style wine that has become characteristic of Farrow & Jackson chardonnay. The wine is then bottled and returned for cellaring at “Maple Hill”.
